Home made chocolate truffles
I recently had an urge to try making my own chocolates. This is something I have always wanted to do, but wasn't sure where to start. These chocolates were stuffed with a baileys chocolate truffle and were really yummy, even if I do say so myself!! Again, my decorating needs practice! I was having a play with my new powder food colouring that had arrived, and it can be used to colour white chocolate!! I was trying to get a deep red, but I know this is not all that possible when mixing into white, I was pretty pleased with the final colour, and I reckon I could have gone slightly darker, if I'd mixed a little darker colour in.
I adapted this recipe from BBC Good Food, which can be found here, rather than 142ml of cream, I reduced this by half, and replaced the other half with Baileys, and the result was scrumtious! I then filled some ice cube trays with white chocolate, waited for it to set, and then added the filling, before adding more chocolate. I was pretty impressed by just how easy these are to make, and as a result have just ordered some chocolate moulds!
I did also make the centres of the truffles from BBC Good Food, and I used this as a centre all by itself, and did the chocolate in the same way. These were lovely! Sadly no pictures of those though, as they didn't last too long!! I have more caramel in the fridge and so may make some more. These choccies went down very well with the neighbours!!
I'll certainly be making more chocolates, I hope to make some as Christmas presents, they are pretty simple and quick to make, and the types of filling you can use is pretty endless!! I'm actually very excited about trying new fillings! I'll keep you posted on good recipes I come across.
